This project was born from a family idea and the vision of a young entrepreneur who from an early age discovered his passion for gastronomy, starting out as a waiter — “Mozo” — at a restaurant near Jorge Chávez airport in the city of Lima, Peru. In 2017.
He then studied bartending for two years, which helped him widen his knowledge and drew him in far more deeply, with Peruvian and Venezuelan food as his main foundation. Years later he went into Ecuadorian and Colombian food.
In time he faced the challenge of starting from zero on arriving in the USA. With a much broader proposal, studying at a baking and pastry school in the city of New York. Building a much broader work profile, more presentable and competitive for the job market.
If we could define this project's whole story in a single word, the name “Charlotte” is the family's pride and represents the effort of all those years of study, discipline and dedication to reach a goal.
